This month, Elior’s “So Good” Monthly Fresh Ingredient spotlight celebrates a true garden gem: Swiss Chard. Often overlooked in favor of its cousins, chard offers a robust texture and a sophisticated, earthy sweetness that thrives in the cool morning air of early April.

To honor this seasonal star, we are featuring a Swiss Chard Galette—a dish that perfectly embodies the “Fresh from Scratch” philosophy while offering a rustic elegance that fits seamlessly into any professional retail space.

The journey of this dish begins with the craft of the dough, a cornerstone of the scratch-cooking tradition. By pulsing cold, cubed butter into a seasoned flour base and hydrating it just enough to hold, we create a pastry that is exceptionally flaky and golden. After a necessary rest in the refrigerator, the dough provides a buttery, structural canvas for the vibrant filling. It’s the “effortless cousin” of the tart world; its free-form, hand-folded edges signal to every customer that this was prepared with care and an artisanal touch, rather than coming from a box.

The heart of the galette lies in a balanced sauté that transforms simple greens into a complex flavor profile. The process starts by crisping salty prosciutto before softening sweet leeks and shallots in the rendered fat. When the chopped Swiss chard hits the pan, it is brightened with aged balsamic and fresh lemon zest, while a pinch of red pepper flakes provides a subtle, warming finish.
