This month, we’re featuring fresh sweet corn as part of our SoGood! seasonal program.
This recipe comes from our Be Well Wellness Program and highlights wholesome ingredients like vegetables, whole grains, and minimally processed foods. These corn cakes are proof that nutritious food can also be full of flavor.
Fresh corn is combined with cornmeal, whole wheat flour, red onion, cilantro, cheddar cheese, and buttermilk to create tender corn cakes with a lightly crisp exterior. Some of the corn is blended to add natural creaminess, while the remaining kernels provide texture and sweetness.
The cakes are cooked on a lightly oiled griddle until golden brown and crisp on the outside.
They are served with a simple roasted red pepper sauce made with roasted red peppers, garlic, basil, milk, and parmesan cheese. The sauce adds a savory complement to the sweetness of the corn.
Serve warm with a spoonful of roasted red pepper sauce for a delicious combination of sweet corn and savory roasted pepper flavor.
