Cura’s Corporate Executive Chef Lance Franklin shares that when it comes to global foods,  Mediterranean food consistently stands out for its health benefits and vibrant simplicity. “Inspired by that tradition, I created this Mediterranean Tofu recipe that pairs easily with a range of sides, while also offering a thoughtful option for those following a heart – healthy lifestyle,” shares Chef Lance.

Built on fresh, high‑quality ingredients, the dish is brightened by a red wine vinaigrette with a bold, balanced flavor – robust yet pleasantly sharp. Our Mediterranean spice blend combines allspice, coarse sea salt, cumin, and select herbs for added depth. If the blend isn’t available, your preferred seasoning works just fine—just be mindful of sodium to maintain heart‑healthy integrity.

At its core, this recipe reflects some key Mediterranean principles: vegetables and lean, well‑prepared proteins. For plant‑forward diners, tofu is a versatile option, but proper preparation matters. Cutting it into uniform pieces ensures even cooking, better texture, and a more satisfying result.
