Food Blog: Waste Nothing with No Waste Italian Tomato Sugo Pasta

Since January 1, 2024…Through our Waste Nothing program, Cura has diverted over 100,000 lbs. or 15% of its food waste from the landfill through donations, recycling, composting, and rescue recipes. Enjoy our Waste Nothing Italian Tomato Sugo Pasta, a perfect example of our commitment to reducing food waste implemented across all of our senior living communities and acute care facilities.

As summer fades and the cool, brisk air of fall sets in, we welcome the shorter days of late September. To celebrate the season, we’ve added a delightful Italian Tomato Sugo Pasta to your recipe catalog, perfect for using up an abundance of leftover garden tomatoes while embracing a NO-WASTE mindset!  

“Sugo” is the Italian word for sauce, and this authentic tomato sauce traditionally combines pork, red wine, and tomatoes. The dish begins with searing the meat to enhance its flavor, followed by slow braising in a rich sauce made from red wine, tomatoes, herbs, vegetables, and broth. In this version, I’ve adapted the traditional recipe to help us repurpose unused beef and pork, transforming them into a delicious sauce that’s ideal for fall menus. The result is a deeply flavorful, melt-in-your-mouth dish.

Using bone-in pork or beef will add an extra layer of richness, elevating the sauce even further. I also recommend adding leftover Parmesan rinds, which are often discarded, to slow-cooked sauces for added depth. This recipe offers a fantastic way to utilize leftover herbs, tomato paste, and canned or fresh tomatoes that might otherwise go to waste.
